Colline Novaresi doc Croatina

Croatina is a grape variety that traditionally characterizes the hilly areas. He loves the limestone-clay soils, and for that here ideal environment for cultivation.
The resulting wine, the Colline Novaresi doc Croatina, is pleasantly cool and rather light. It does not require aging and is ideal for daily use, but be careful to product quality.
Its color is red with numerous shades that darken from red to dark ruby red, and its aroma is pleasantly fruity.

  • Surface : 1,5 hectares
  • Age of vines : 0,3 ha 100 years abt; 0,3 ha 25 years; 0,9 ha 6 years;
  • Composition of the soil : the vineyards are situated in the Supervolcano’s Geo-park of Valsesia (UNESCO heritage). The inactive crater of this volcano was formed more than 60 million years ago. It is a unique territory, one of a kind. The soil is rich in porphyry which makes the soil acid and sterile, very suitable for the cultivation of vines.
  • Breeding system : Guyot
  • Plant density : 4300 vines/hectare
  • Yield per hectare : 90 – 100  tons/hectare
  • Grapes harvesting : the grapes, on reaching maturity towards the end of October, are collected and manually selected to ensure the highest quality and the maximum integrity of the grape.
  • Vinification : immediately after harvesting, the grapes are destemmed and pressed and the maceration takes place on skins for about 8 days in steel thanks. After the racking, the malolactic fermentation forced by temperature takes place with natural autochthonous yeasts. Extremely low sulphite dosage.
  • Maturation : 18 months in stainless steel tanks.  Put up on sale at least 18 months after harvesting.

  • Taste : Rich, savory with a slight minerality. A tasty and persistent Croatina, rightly balanced in acidity and tannin
  • Serving temperature : 16° – 18°C
  • Suggested matching : Ideal with cold cuts, salami and semi-seasoned cheeses. Also excellent when paired with strong-flavored meats

Suggested combinations from the Italian tradition : tagliatelle with mixed meat sauce, polenta and tapulone, beef stew and rabbit roll with mushrooms.
