  • Vineyard age : 0.3 hectares 6 years – 0.3 hectares 4 years
  • Grape variety : 100% Erbaluce (or Greek Novara)
  • Soil composition : the vineyards are located in the Supervulcano della Valsesia Geo-park (UNESCO heritage). The inactive crater of this volcano, formed more than 60 million years ago, is a unique area of ​​its kind. The soil here is rich in quartz porphyry which gives an acid and sterile soil, very suitable for growing grapes.
  • Training system : Guyot
  • Yield : 80 quintals / hectare
  • Harvest : The bunches, having reached ripeness in the second / third decade of September, are harvested and selected manually to ensure the highest quality and maximum integrity of the bunch. < / li>
  • Vinification : Immediately after harvesting, the grapes are destemmed and pressed; the crushed grapes are left to macerate for 4 days at a low temperature in steel tanks. We then proceed to pressing and activating the fermentation of the must. At the end of the alcoholic fermentation we proceed with the racking and sulphiting.
  • Aging : 8/10 months in steel tanks. Put on the market 10 months after the harvest
